One of the world's top producers of organic coffee in Mexico, one of the biggest coffee-producing nations. Small farmers in Chiapas' southernmost states produce the majority of Mexico's coffee, especially the organic variety. This Mexican coffee is highly cultivated, and the region's fertile volcanic soil has resulted in a medium-bodied, 16-ounce roast with a bit of acidity. Most Mexican beans are available in medium or dark roasts since they maintain their flavors pretty well, even when roasting them deeply.
